This is really good to serve on a bun with coleslaw.
BBQ Pulled Chicken
Ingredients
1 Cup Water
4-5 Chicken Breasts (~3lb), or 2lb Chicken Breasts + 1lb Chicken Thighs
1/2 Tsp Onion Powder
1/2 Tsp Garlic Powder
1/2 Tsp Paprika
1/2 Tsp Salt
1.5 Cups BBQ Sauce
1 Small Onion, Grated + Juice
2-3 Tbsp Brown Sugar
2 Tsp Worcestershire Sauce
3-5 Tsp Cornstarch
Instructions
Place ingredients in the instant pot in this order”:” Water, Chicken, Spices, BBQ Sauce, Grated Onion, Brown Sugar, Worcestershire Sauce.
DO NOT STIR after adding ingredients.
Cook at high pressure for 15 minutes + 10 minute natural release, then vent pressure.
Shred chicken apart with 2 forks.
Set pot to sauté mode. Gradually add cornstarch while stirring to thicken sauce. Add more BBQ sauce if desired.
