BBQ Pulled Chicken

This is really good to serve on a bun with coleslaw.

Ingredients

  • 1 Cup Water

  • 4-5 Chicken Breasts (~3lb), or 2lb Chicken Breasts + 1lb Chicken Thighs

  • 1/2 Tsp Onion Powder

  • 1/2 Tsp Garlic Powder

  • 1/2 Tsp Paprika

  • 1/2 Tsp Salt

  • 1.5 Cups BBQ Sauce

  • 1 Small Onion, Grated + Juice

  • 2-3 Tbsp Brown Sugar

  • 2 Tsp Worcestershire Sauce

  • 3-5 Tsp Cornstarch

Instructions

  1. Place ingredients in the instant pot in this order”:” Water, Chicken, Spices, BBQ Sauce, Grated Onion, Brown Sugar, Worcestershire Sauce.

  2. DO NOT STIR after adding ingredients.

  3. Cook at high pressure for 15 minutes + 10 minute natural release, then vent pressure.

  4. Shred chicken apart with 2 forks.

  5. Set pot to sauté mode. Gradually add cornstarch while stirring to thicken sauce. Add more BBQ sauce if desired.
