Bean & Rice Burritos

This is really good with 2 president’s choice taco seasoning packs (1 hot, 1 mild).

Ingredients

  • 1 Cup white or brown rice

  • 1 Green pepper - diced

  • 1 White onion - diced

  • 3 Cloves garlic - minced

  • 1 Jalapeno - seeded/diced

  • 1 Tbsp olive oil

  • 1 Can black beans - rinsed/drained

  • 1 Small can diced tomatoes

  • 1/4 Tsp crushed red pepper flakes

  • Jar of salsa

  • Seasoning (or use Taco seasoning of choice):

  • 1 Tbsp chili powder

  • 1 Tsp cumin

  • 1 Tsp salt

  • 1 Tsp black pepper

Instructions

  1. Cook rice in a saucepan.

  2. Meanwhile, in a skillet, saute green pepper and onion in oil until tender (3-4 mins) on med heat.

  3. Add garlic/jalapeno, saute for another 1-2 mins.

  4. Add beans, rice, diced tomatoes, pepper flakes, and seasoning. Cook for another 4-6 mins on med/low heat.

  5. Serve with salsa & other taco toppings
