Baked pork tenderloin with a nice touch of sweetness.
Pork Tenderloin with Sticky Lime Glaze
Ingredients
1/4 cup soy sauce
1/4 cup liquid honey
3 Tbsp lime juice
2 tsp grated lime rind
1 small onion - diced
2 Tbsp minced ginger root
2 gloves garlic - minced
1/2 tsp black pepper
1 Tbsp veggie oil
2 pork tenderloins
Instructions
Mix soy sauce, honey, lime rind, lime juice, onion, garlic & pepper.
Add pork to mixture, turning to coat.
Cover and marinate in fridge for 1-5 hrs.
Drain pork preserving marinade.
Roast pork in oven @400f until internal temp reaches 145f (63c), typically approx 45 mins - 1 hour.
Bring marinade to a boil - add 1 Tbsp cornstarch mixed in with a bit of water to thicken if desired.
Let pork stand for 5 mins before slicing.
Serve with marinade sauce and rice.
