Pork Tenderloin with Sticky Lime Glaze

Baked pork tenderloin with a nice touch of sweetness.

Ingredients

  • 1/4 cup soy sauce

  • 1/4 cup liquid honey

  • 3 Tbsp lime juice

  • 2 tsp grated lime rind

  • 1 small onion - diced

  • 2 Tbsp minced ginger root

  • 2 gloves garlic - minced

  • 1/2 tsp black pepper

  • 1 Tbsp veggie oil

  • 2 pork tenderloins

Instructions

  1. Mix soy sauce, honey, lime rind, lime juice, onion, garlic & pepper.

  2. Add pork to mixture, turning to coat.

  3. Cover and marinate in fridge for 1-5 hrs.

  4. Drain pork preserving marinade.

  5. Roast pork in oven @400f until internal temp reaches 145f (63c), typically approx 45 mins - 1 hour.

  6. Bring marinade to a boil - add 1 Tbsp cornstarch mixed in with a bit of water to thicken if desired.

  7. Let pork stand for 5 mins before slicing.

  8. Serve with marinade sauce and rice.
